This is such an elegant, flavorful soup. In the past when I think of cream of mushroom soup I think of that salty canned stuff.
I have found that for this recipe because it cooks so fast, fresh herbs work so much better than dried.
1 lb white mushrooms, sliced thin (no stalk) 1/4c butter (do not substitute) 4 green onions sliced thin (scallion) 3 clove garlic, fine chopped 1t Thyme, chopped (I use all sorts of thyme) 2T flour 4c vegetable broth (can also use chicken broth) 1c heavy cream salt and pepper to taste 2T brandy (optional)
1. melt butter in pot & cook onion, garlic, thyme. contiously stirring until garlic is softened (about 1-2 min) 2. add mushrooms, salt and pepper and cook for approx. 5 min (until mushrooms soften) 3. add flour. stir continously for approx. 2 min. 4. add brandy and stir for 2 min. 5. add broth. return to boil. reduce heat and simmer for 5 min. 6. whisk in cream and return to simmer. Do not allow soup to boil 7. season with salt and pepper. can add more thyme or even some chives.

I can tell already I will like it but well let you know for sure when I try it... I love soup and could eat it every day.
I was listening to a western MD/Chinese doctor on the radio yesterday and he said mushrooms are very good food for us in the fall winter and so are root vegtables ~ he said it is better to eat salad in just spring and summer... this time of year we need warming foods.....

that sounds macrobiotic to me......have i tumbled into the midst of a board full of vegans? am ashamed to say that i still eat a little chicken. am fighting to drop this as well but not successfully yet. do i need to put my head below the parapet and wait for the arrows? sama

no way girlfriend! I'm as much of a garbage can as the good lord allows!!!
I'll post my minestrone soup recipe tomorrow. I need to think actual measurements measuements (I use my hands to measure most things). I switch off from making it total veggie or adding beef to it. And I eat this soup for dinner at least 4-5 times a month.

I am writing a cookbook for dealing with food aliergies. I have some wicked allergies to food so I had to learn how to do substituting and whatnot to make things palatable and safe. In speaking to others with allergies, they are so overwhelmed they do not know what to do and think whatever it is will be bland
this is an inspiration of mine from my sister in law who does not know how to handle my niece's allergies. she knows but then again she gets overwhelmed about organizing things and making dinner. so hopefully this book will have good recipes and teach one how to approach eating when you're limited
