Very easy to prepare. I make mine without the glaze. Good for any occasion.
Shell:
I buy the mini fillo shells to cut down on calories (in the freezer section near the frozen pies). You can use any kind of crust. For this recipe, I buy 2-3 packages of shells.
Filling: 1 (8-ounce) package cream cheese, softened 1/2 cup granulated sugar 1 teaspoon vanilla extract
Topping: Fresh strawberries, kiwi slices, blueberries, raspberries
Glaze: 1 (6-ounce) can frozen limeade concentrate, thawed 1 tablespoon cornstarch 1 tablespoon fresh lime juice 1/4 cup granulated sugar
Preheat the oven to 350 degrees F. Heat the fillo shells for about 5 mins. Take out to cool.
For the filling: Beat the cream cheese, sugar, and vanilla together until smooth.
For the glaze: Combine the limeade, cornstarch, lime juice, and sugar in a small saucepan and cook over medium heat until clear and thick, about 2 minutes. Let cool. With a pastry brush, glaze the tart. You will not use all of the glaze.

Scorpio, this is very similar to the way I make my no-bake cheese cake (also has no glaze)! The beauty of such a recipe is that is is WONDERFUL for hot summer get togethers when you just don't want to be anywhere near a stove or oven. ;D

Arcadia: I LOVE LOVE LOVE cheesecake!! Anything with cream cheese I love. Yes, very good for summer get togethers. I use light cream cheese also..to cut down on the calories... it is summer and all. LOL. My sister gobbles down about 12 of them every time I make them.

I Love cream cheese too! The cheesecake is 2-2 1/2 8 oz cream cheese, 1/2 granulated sugar and one 8 oz. cool whip. You blend it all together, fold into two ready made/bought crusts (oreo or short bread are good) and top with canned fruit. (you can blend in 3/4 cup semi sweet chocolate chips and put in chocolate crust--OH BOY!) VERY Cream Cheesy! You ever make those things with the diced green onions and cream cheese rolled up in ham or turkey slices? YUUUUMMMMM!

Hey thanks! I will definately try making your cheesecake. I think I will have to try the cream cheese rollups too! You should see me with crab rangoons... I can eat a whole large order by myself. ;D
