Crusty Puffed Potatoes
4 small red potatoes
1 teaspoon olive oil
1 teaspoon coarse salt
Preheat oven to 475 degrees
Rinse potatoes and dry well with paper
towels.
Rub potatoes with oil. Cut each potato in half
and sprinkle cut sides with salt. Put potatoes
on a baking rack and let stand 10 minutes so
salt can draw some water out of potatoes. Bake
potatoes on the baking rack (not on a baking
sheet) on middle rack of oven until cooked
through, about 20 minutes. Increase
temperature to 500 degrees F. and bake
potatoes until puffed and golden, about 5
minutes more. Serves 2.
I have yet to try this but I like to collect recipes and think about trying them due to the fact I am a Gemini cook or not much of a cook.

I knew exactly what was going on...... everyone knows that the other meat means.... PORK!
They filmed one of those TV commercials down the road from here where they discuss the other meat. There is a Czech restaurant with funny looking roof architecture that they filmed to make it look like they filmed in in Russia or some place.
Pork the other meat......

speaking of pork
Did anyone watch Anthony Bourdain going crazy over a roast pig in Bali the other night on the travel channel? It was too much. He is a strange guy - rather lizard like and I met him once when he was trying to feed me dried apricots he bought earlier in the day at farmers market... so very stuck on himself. He kept trying to tell me about his television career but I just to bug him kept changing the subject. That was before I ever saw watched him on TV where he chain smokes his way around the world. Food and cigs and stuck up men don't mix well with me.
