I just thought that I would share this with you all. It's quick, easy and very tasty. You can do most of this recipe to taste. So if you want it a little spicy, do that, if you want to add beans, do that. It's really just a good start to a soup and very much however you want it. Try it. I really like this soup.
4 C Water 4 chicken boullion cubes 2 15 oz cans of hominy 2 15 oz cans of tomato sauce ( you can also use steward tomatoes) 2 small cans chopped, peeled green chillies 1 pkg of pre-cooked chicken cut into bite sized chunks
1/2 tsp cliantro 3/4 tsp garlic powder 3/4 tsp chili powder
Cook all of this together and heat until hot. Serve with tortilla chips, sour cream and shredded cheese. Lime juice if you want it.
I put in a good tsp of sour cream, then crush up the tortilla chips (Doritos are good) and put the cheese on top of that.

My best friend from High School moved to Mexico City to study opera. When she moved back she use to make this soup for me and it was wonderful She makes killer Mexican food and she also lived in Italy too where she learned to make pasta from scratch and dry her own tomatoes. She comes from a family of cooks. Her dad use to cook in casinos in Tahoe. She is one fantastic cook!
