we love this one - even non salad eaters like it!
large bunch lambs lettuce or rocket
1 lime
1 ciabatta loaf, de-crusted and torn into chunks
pkt prosciutto
olive oil
one crisp, sweet apple
put the chunks of ciabatta on a baking tray, and drizzle with olive oil. dont use extra virgin for this though. drape the prosciutto over the bread pieces, covering as much as possible, and drizzle further with olive oil. place in oven at halfway between medium and high heat for abt ten minutes, until ciabatta is crispy and bread golden.
in salad bowl mix a good slug of olive oil, the juice of the lime, the apple, cored and cut into chunks, and the lambs lettuce.
mix lightly
remove baking tray and immediately tip contents into salad bowl, mix well with hands, to coat everything nicely, and ENJOY!!

oh it IS!! its a recipe from the wondrous jamie oliver, the cockney chef, who is about to take america by storm!! he has demystified food for me, and i made this again last night............ i cannot tell you how ashamed i am of the AMOUNT i ate! it was glorious! if i sez it meself as oughtnt!! lol!
